Latest update: It's raining (HEAVILY), I'm at home listening to UB40 playing on the local radio station whilst attempting to bake my first banana cake. Have just received a few unexpected visitors at the house and am feeling guilty that I have no Nshima (Zambian staple food) to offer them. I'm not sure yet how to cook Nshima. All the Zambian women keep telling me there's no recipe as such, "you just mix and stir until you know how it feels". I'm not sure how you prepare something with no measurements, but I will give it a try. I don't think I can wait for the cake to rise, so tea and biscuits will have to do. Over and out for now.
