Apricots

This year our apricot tree is the fullest it's ever been. What seems to happen with these trees is that every other year you get a full tree of fruit. Last year we only had about 10 apricots and yet the year before last it was full. Our apricot treeThe fruit is just about ripe and in a few days they will be just perfect to eat. As we have so many we'll be giving a lot away but I am thinking of making apricot liqueur. I have never made it before but I have checked out some recipes on the internet and it seems pretty easy to make. It can be a companion to my home-madeLimoncellowhich I produced again this year.What to do with the apricots? The summer's arrived now. We're getting lovely sunny days with clear blue skies something I am especially pleased about as we are now producing our own electricity from photovoltaic panels on our roof. They convert solar radiation into electricity. Obviously the more sunshine we get the more it produces.Now I have to pick some ripe lemons off our tree to make lemon meringue pie to take to a party where I'll be celebrating with English friends Queen Elizabeth 2nd's Diamond Jubilee. Ironically today here in Italy it isFesta della Repubblicawhich celebrates the formation of the Italian Republic on the 2nd June 1946 thus consequently the Italian monarchy were sent into exile!
