We have got so much Basil in the garden this year I have decided to freeze some for the half of the year when we don't have any. After giving some of the leaves a quick wash I then left them to dry briefly in the scorching sun. I then had to do the tedious job of picking off the leaves and laying them neatly in a used ice-cream container! They are now packed away in the freezer and I know I'll appreciate them when I can no longer just pick it fresh from the garden, it was one of the things our guests in the holiday lets appreciated this year; picking some of the fresh herbs direct in the garden.Fresh BasilDrying in the sunIt has been the hottest summer in 60 years! There has been no respite from the heat. Usually in the summer you get a bit of a cool breeze in the late evening, especially this time of year at the end of august. However this year it has been hot and humid all day and night! Parts of Italy are experiencing quite a severe drought at the moment. We have had a few forest fires too here in Sardinia. Hopefully the heat in September won't be as intense.
