Lemons!

Our biggest lemon treeOur three lemon trees in the garden are lush with their fruit at the moment. I have been pondering for some time how to put some of them to good use.....what could be better thanLimoncelloa marvellous Italian liquor which is drunk at the end of a meal as a perfectdigestivo.This will be my first attempt, but it is quite simple to make. After leaving the lemon peel in 90% alcohol to infuse for 2 weeks, strain the peels and add a syrup made from water and sugar, it can then be drunk straight away. I love the stuff.There is such a lovely fresh smell from the trees as you walk by and it's a real treat to be able to pick a lemon fresh from its source just before you use it. I'm sure there are so many more nutrients in any fruit if it's eaten as soon as its picked. It's a joy being able to pick the ingredients as I'm cooking; basil, parsley, rosemary, and laurel are all our friends in the garden.
